Meatloaf in the Instant Pot? It doesn’t sound like your traditional Instant Pot recipe, but it is SO good.
If you would have asked me a year ago if I ate meatloaf, there wasn’t a chance. It just was not something in my diet. I’m not sure if its the name or what but I just never had interest in eating it. My husband on the other hand, always wanted it.
I got the Instant Pot a while back and started trying out different recipes. Everyone told me how good meat tasted cooked in it, so I thought I’d try this out. I played around with various recipes, adding or removing different ingredients time after time of making it. Now, I have a recipe I love and is SO easy to cook.
What You’ll Need
I use this 6 Quart Instant Pot and it fits the loaf perfectly. You can fit the entire meal in this and cook all at the same time. (Potatoes, vegetables, meat). Any pressure cooker will do.
How To Make Instant Pot Meatloaf
The recipe is quite simple. First I cut the potatoes and onions into small wedges. The potatoes, onion and carrot go on the bottom of the instant pot, covered with 2 cups of beef broth and sprinkle brown sugar on top.
To make the meat loaf I mix in a separate bowl the ground beef, eggs, parmesan cheese, bread crumbs, barbecue sauce a pinch of salt and pepper. after this is throughly mixed together I make it into a rounded loaf shape and place on the instant pot wire rack, laying right on top of the vegetables. I top the meatloaf with a thin layer of BBQ sauce and sprinkle brown sugar on top. Then cook on high pressure for 25 minutes. I do let the instant pot release on its own rather than doing the quick release.
