Crockpot meals are my favorite. I love a simple recipe to throw in the slow cooker in the morning, and then dinner is basically done. My go to recipes are chicken recipes since we tend to keep a lot of frozen chicken on hand. This chicken and rice chili is SO easy to make. I generally have all these ingredients on hand, so its a go-to recipe in our house.
For this recipe you can use any slow cooker, crockpot or instant pot. I use this 7 Quart crock pot, or my 6 quart instant pot using the slow cooker setting.
Ingredients
- Two large chicken breasts (can be frozen)
- 1 can diced tomatoes
- a brick of cream cheese
- 1 can black beans
- 2 cups of rice
- 1 can red kidney beans
- 1 can great northern beans

How to Make Chicken and Rice Chili
Start with spraying the bottom of the crockpot with cooking spray to avoid sticking to the pot. Place in the crockpot the chicken breasts, the beans (all drained), brick of cream cheese and the can of diced tomatoes. Do not drain the tomatoes. This can cook on low for 8 hours, or high for 8 hours if the chicken is frozen.
Before serving, shred the chicken up. The chicken should be easy to shred with just a fork stirring it around in the crock pot. For easier shredding, you could use these shredding claws. Right before serving you will add the cooked rice. Cook the rice separately and then stir into the crockpot meal or serve over top of the rice.
This recipe is so simple and delicious. It is one of my go to recipes that I can just throw into the crockpot before work and let it cook all day. It takes little to no time, and most the ingredients I have in my house without a special shopping trip.
